    Easiest is Argorock. Any attack it uses makes it tail glow to pull with the Hookshot. Hardest would be either The Imprissioned, as it always has a ton of health and loves to waste your time. Or Manhandala, as its seed barage can instantly take away your A-Rank victory if it sneaks up on you.

    Easiest: Either Argorock because of the same reason as him or Ganon because it does all the other bosses attack (not the imprison) so I know his attacks. Difficult: THE IMPRISONED AND MANDRAKE

    For me, Dodongo is the easiest to defeat because you can reduce its health with any attacks even if they don't open its mouth for me to throw bombs. Bombs are the default item too so no need to switch to a different one. :D I agree Argorok can be easy to defeat as well but when it has taken too much damage, they just bombard you with huge fireballs without showing its blue tail, making timed...

    ...missions a challenge. Hardest one to fight from the above illustration as we all can agree is The Imprisoned! Though, right now, I'm having a hard time to defeat Phantom Ganon quickly! You guys have any tips on fighting him? I still can't get the Gold Skulltula on the last Legend/Free Mode mission OTL

    Its actually pretty easy. (But if you need extra help, bring along Young Link, so you can spam the Focus Spirit Break attack) Phantom Ganon has a few attacks that expose his weak-point gauge. For one attack, he spins around with both swords in a circle. When he stops spinning, he'll start laughing. Thats when you attack his back to get him down.
