    I kind of prefer fighting on foot, but many of the fights are near impossible without a Skell.

    Actually, that has more to do with ground builds and rotation. There are plenty of videos online showcasing several builds as well as how to make them. Also, skells are supposed to be used on the hard stuff.

    I'm a bit surprised that the game doesn't apply a accuracy debuff to you if you try fighting small stuff in skells tbh.

    Yeah, this game can be a bit advanced. Luckily for you though, several cake recipes come in a pre-mixed box form, so all you have to do is follow the insructions. There are many builds like the well-known ether blossom dance build, or the easier to accomplish, IMO, executioner build by Zipzo. It's just a youtube or google search away. Good luck! Here's a start.
