I like Sans's for its difficulty. I like Flowey's (The incredibly OP one) for the theme, and because it's a little revealing. And Asriel's because it's so deep, also the theme.

I would say Toriel's fight in the genocide run. Only after the pacifist run though. I found I had bonded with the character and it was actually an emotion filled fight, especially when you end up killing her in one swipe out of nowhere. This fight showed me how good this game is with its story and made me appreciate the game.
