In expeditions, monsters always leave and it becomes a huge waste of time. Is there any sort of actual trick to make sure they don't leave?

    Best you can do is get them with a paintball to mark where they are better and try to kill them before they leave.

    Expeditions can be a nice way to learn your weapons if you are trying something new out. Since you arent timed and can get KOed as much as you want without penalty practice on the weaker monsters and at the very least you can get some supplies turn it into a gathering run. Sometimes I farm nectar to sell on them.
