Question: How many times can I mount a single monster? is there a limit at all?

Pretty sure there's no limit to how many times a monster can be mounted, but the amount of air attacks it takes to mount a monster increases with every successful mount.

Basically, it gets harder to mount each time. Same goes with poison, paralyze, sleep, exhaust, KO, and blastblight. Each monster is different to how many times you need to "hit". Not sure about limit, but kiranico(.)com states a 'maximum' which I don't quite get.

Cool lil tip the fist time you try for a mount, you will always land it.

That's simply not true. For low rank, yeah, the mounting resistance is extremely low, but in High Rank and up a single hit will not mount a monster. Calvin -> Maximum is where the number will not increase past. So the hits to mount will remain constant once you've mounted it up to the maximum value.
