    Depends on your playstyle dude, life works if you get hit a lot and you want to keep attacking (plus GS is fabulous for Life as it allows you gain more than half your health back). However a majority are very religious when it comes to hone for attack. Defense works for every weapon and it comes with natural Divine Blessing which can help you prevent getting one shotted.

    I recommend doing the Apex Deviljho arena quest to try out how the Life hone works, since all the weapon types in that quest are honed for Life.
