    Amiibos, are learning AI. Every time you fight them, they accumulate knowledge about how to defeat you. If your amiibo has only/mostly battled against you; then it has a HUGE pool of data about your strategies, your custom fighters, your play style, how you react to stimuli and situations, ect... So it would have a much smaller data pool to use against your friend, making it easier to defeat...
