    You have to beat a level while collecting and keeping at least 50 rings in a regular stage (non boss/#3 stage), and then jump through the large ring at the end of the level by the Eggman sign you normally run past. That'll open up a secret mini game and the emerald is hidden inside somewhere. Save states are clutch for those levels!
