I farmed most of my coins by driving short courses like Moo Moo Meadows and Toad's Turnpike in time trial. Every time you finish with 10 coins they're added to your total -- but extra coins aren't counted.

What's sad about that? It's just another way to get extra coins. As long as you keep racing, no matter how you do it, you'll get there eventually.
