There are several places that you can only enter once you beat the champion, like the cave in pokemon village ( where you find mewtwo ). I recommend going backwards and seeing what new areas you can now explore.

Also there is this guy called the looker! And he assigns you random jobs to do after you beat the game. I think he rewards you but I forgot
