    Don't remember who unlocks it, but you can just go kill the Shadowsaurus in the Dark Void on Cacto Cove

    in order to complete it you need to get the quest first

    No you don't. You can complete quests without having them unlocked. As long as you know what to do for it, you can complete the Challenge and Report back to your Life Master and you will still receive the Stars for it.

    The one you're missing is; Dino Hunter - As a Mercenary, defeat 1 Shadowsaurus in the Dark Void on Cacto Cove. So long as you stay as a Mercenary and defeat the Shadowsaurus, you'll be fine. The Challenge Completed text will still appear just the same as the other Challenges.
