Arceus has a skill called "Double Normal", which actually boosts Normal Type attacks by x2.5, which is 50% more damage than Super Effective (which is x2.5).

they use a team like that because arceus's ability powers up damage dealt by normal types in a combo, so, they just need to put in a team of OP normal pokemon and make manual combos if the normal combos don't roll, so, more damage means more points

It's due to Arceus' Double Normal ability. Once triggered, it deals 2.5x damage (despite its name); SE types only deal 2x. There are now 2 Normal types w/ a 110 max power. Add a 3rd super strong Normal and M-Gengar's ability to act as a pseudo-C-1, and you have a very formidable team.
