Here's an idea: After you defeat Bowser you'd fight Dry Bowser ,but, you need a special fire flower called the Plus flower. So when you get a special spot (maybe towards the end of a platforming segment) you use a giant fire ball to attack him, and, when you do you get sent back to the begining of the platform segment. What do ya think?
