Question

so im in act 1 in the part where you need to go to the air temple, but before doing that i started the theif/water sidequest. Is it possible to finish it aftet going to the air temple?

Yes, it is. In fact, it is impossible to fully complete the quest without having beaten the boss at the Wind Temple.

The sidequest gets you four jobs (Thief, Merchant, Spell Fencer, and Time Mage) but can't be completed until after you awaken the wind crystal. You CAN get the first two jobs in the list before that.
