If one were to go for the falsse ending, when would be the best time? Does it take place as soon as you do what you're supposed to start it? Does it end the game? Minimal spoilers please.

IMO the best time is the third or final crystal in chapter 6. Make sure you have the final job before you do it, since that side quest contains a lot of story.

After you beat the false ending, the game will put you back to before you triggered it with all your new equipment. You can then do the true ending!
