Bow or Katt (who you'll meet later in the game) can attack them, which will net you a Roast. Roasts can: 1.) fully restore your HP, and 2.) be used for ingredients in cooking. Early in the game, you should sell them and use the Zenny to beef up your weapons and armor.

No unfortunately it's the same your bow power has nothing to do with it but, if you can shoot the white deer you can make a great cash early in the game.

Yeah I hit the deer like 7 times before it walked off of the screen. Its ridiculous how many hits it takes.

ALWAYS use Katt to take out the deer, as her staff is quicker/easier to use. You can actually corner animals in some of the hunting spots, too, which helps a lot. But be careful of the bears you find later in the game -- they actually attack you!
