埼玉県の郷土料理・いが饅頭。同県内の北部穀倉地帯で伝承される和菓子で、こし餡の饅頭の回りに赤飯がまぶされていて、その姿が栗のイガに似ていることから名付けられた。実はこの和菓子、商業目的で生まれたものではなく、県北地域の農村で「ハレの日」などの贈答品として作られたもの。現在「いが饅頭」は、田植えのあとや夏祭り、稲刈りの時などに親戚/知人に配られていたが、菓子職人に取り上げられ製法の改良をされ商品化、同県内の北部地域の珍しい土産物として定着している。出典:Wikipedia 「いが饅頭」より
