    when you hit them, pokemon will become wobbly at random, usually. bosses have a special "recharge" phase (they stop moving and have smoke above their heads) where they can become wobbly more easily.

    quite a few pokemon can learn endeavor (like the starly line), and getting a pokemon with gutsy is random. Any pokemon can drop with gutsy, gutsy+, gutsy++, etc.
