沖縄県の郷土料理・山羊汁(ヒージャー汁)。ヒージャーグスイ(山羊薬)とも呼ばれる山羊料理は、農村における栄養補給源として重宝がられている。また、現在でも祝い事の際に大きな鍋で長時間煮込んだ山羊汁を大勢に振る舞う習慣もある。なお、山羊肉は独特の臭みがあるため、ヨモギや生姜をたっぷりと入れ、塩味で食べるとのこと。ご当地・沖縄の猛暑に打ち勝つ体力を育んだ先人の知恵を活かした料理といえよう。出典:沖縄県栄養士会監修うちなー料理レシピ
