Is there anything else to do after you fight gannon? or is it just an endless loop of comeijg up in the castle and fight gannon again?

It is a endless loop but the game still knows you finished it, if you want to do something else outside hyrule castle then leave the area of hyrule console and save outside. All 3D Zelda games do that except botw since thats a open world game

Yes it takes you to the Cave of Shadows where you have to stay in Wolf Form and go to a certain amount of floors and beat a certain amount of Shadow Beasts but from what I read online the only thing you get for beating it is a Wallet that lets you hold up to 9,999 Rupees but I also read that there's supposed to be something you can use it for in BOTW I just don't know what
