Why did Link have a cross on his shield? Was he a Christian? Since the first game takes place later on in the chronology, did Link convert to Christianity at that point in time?

This is also a different Link, he must buy the shield from a shop, Christianity likely doesn't exist in Hyrule, plus he's only 10 in Zelda I.

Christianity doesn't exist in the Zelda universe, however, the Goddesses and the creation of Hyrule didn't come about till the 3rd game in the series. The NES had limited room for designs and many games borrow ideas from multiple religions, including Final Fantasy, Zelda, Okami, etc.

In the original Japanese release of LoZ, the Magic book was called Bible, in ALttP the Sanctuary is Church, Loyal Sage is Priest, even the game is called Triforce of the God's. Nintendo had a policy concerning religion symbols in NA so they were changed

Yep, it just goes back to good old 8-bit design. It was the easiest symbol to put on a yellow square that told to your brain, "hey, that's a shield!" Just pull up a youtube video on Mario's Nes design. Blue and red, easiest contrastive colors, and a moustache because mouths were too complex.

Everythin was done t oo save space/memory. Another good point is how on the 8-bit Nes Mario, the clouds and bushes on that famous first level are the same asset, just flipped upside down and pallet swapped to green.
