Since this Old Man knows soooooo much, I have the ultimate theory. The Old Man is actually Link but from another timeline. He matches Link. He hunts and he knows sooo much that Link forgot in his 100 year slumber. You can teleport in this game so he may have just teleported from another LOZ game like Ocarina of Time!! He even gives a paraglider. But that's just a theory, a Game Theory!
