Though Grass/Rock types have fewer weaknesses than either of their component types separately, I don't think they're as good as either defensively because Grass- and Rock-types have several useful resistances (meaning they can be useful defensively depending on stat distribution) and Grass/Rock exchanges almost all of those resistances for neutralities
