    They've announced that it will on numerous occasions, heck the demo they showed at E3 was on the Wii U. It'll be on the NX too, but they've made it very clear it'll be a Wii U game as well.

    If they released the NX version before the Wii U version then tons of fans would be mad for having waited so long for their Wii U Zelda game. And if they released the Wii U version before the NX version, then the NX version wouldn't sell as well due to people having already bought the Wii U version and not bothering with the NX version. Logically a simultaneous release makes the most sense.
