I only just discovered that you can hold down the Strong Attack button during Ganondorf's Combo Attacks to make his gauge fill up more than usual. Granted, I don't use the Greatswords so much since I love the Trident, and I usually just release the buttons right away because it's faster, but I'm still kind of amazed that I never knew this.
