  • I guess that's … one way of looking at it. But a chef, or a designer, can't just make stuff people who "really appreciate the effort" enjoy. They have to make all their clients happy! "Oh, I'm not arguing against that. Actually, that's the main reasons I was reluctant to move to television!" Wait, this wasn't your idea? "Not exactly. Rodney Field saw my videos, and called to offer me my own show."

  • I should have realized … "When I go to review a restaurant, I want the real experience of eating there! That should mean they'd treat me just like any other patron. But the moment they realize I'm a critic, everything changes!" Really? "Ja. They take a lot longer to make the food, for one. They want to make sure it's 'perfect', I guess. But it usually just means it gets to me cold."

  • "I'm already compensated for the meal as part of the job, so it's already pointless. More than that, though, it's essentially a bribe! I can't let it even appear to influence my review! But it's always awkward having to keep explaining why I need to turn it down." Oh. That makes sense. "I've been relatively obscure so far, so it usually takes a while for the owners to realize why I'm there."

"Well, first of all, because I love the art of food. If I can teach that art, that would be fantastic. But more than that, I want to remind myself WHY I love good food! Because despite my experience, it's really the same as anyone else."
