Gulp … "Ha! It was a joke, kjære! Don't look so worried." Okay, um … Freya is Today's Client! Let's walk through the process of making her one classy kitchen! "Kitchen set. It's for a cooking show." Oh? That's even better.

We were that close to having a Swedish chef.'

But enough about me. What prompted the change of career? I guess you're more used to eating food than making it, huh? "I don't think it's much of a change at all. I've always felt a critic needs to practice the craft they're passing judgement on. Otherwise they won't have the right perspective." That makes sense. Well, for food, anyway. I wouldn't expect a film critic to be a director too …

You need some idea of how hard something is to do before you can create an informed opinion!" I guess. Not that it stops people … "Yes, I suppose design is very similar to food in that regard. Everyone thinks they're an expert just because they have a mouth."

I guess that's … one way of looking at it. But a chef, or a designer, can't just make stuff people who "really appreciate the effort" enjoy. They have to make all their clients happy! "Oh, I'm not arguing against that. Actually, that's the main reasons I was reluctant to move to television!" Wait, this wasn't your idea? "Not exactly. Rodney Field saw my videos, and called to offer me my own show."

I should have realized … "When I go to review a restaurant, I want the real experience of eating there! That should mean they'd treat me just like any other patron. But the moment they realize I'm a critic, everything changes!" Really? "Ja. They take a lot longer to make the food, for one. They want to make sure it's 'perfect', I guess. But it usually just means it gets to me cold."

Like he didn't trust that I know what I'm doing when I'm ordering." Wow! If I got service like that when I went to a restaurant, I'd never go back there. "Oh, but the worst part is when they offer to make the meal free!" … Wait, that's bad?

"I'm already compensated for the meal as part of the job, so it's already pointless. More than that, though, it's essentially a bribe! I can't let it even appear to influence my review! But it's always awkward having to keep explaining why I need to turn it down." Oh. That makes sense. "I've been relatively obscure so far, so it usually takes a while for the owners to realize why I'm there."

"Well, first of all, because I love the art of food. If I can teach that art, that would be fantastic. But more than that, I want to remind myself WHY I love good food! Because despite my experience, it's really the same as anyone else."

Really? "Ja. Because food is really all about the basics: fresh ingredients, harmony of flavours, and just … everything coming together well. That all adds up to the simple satisfaction of a good meal!" But didn't you say you needed experience … "My experience is vital for helping helping me explain WHY something works or doesn't. But ENJOYING something good? That takes no skill at all!"

Please tell me that isn't moose meat. "It doesn't … have to be."
