    To get the Coffee shop you will need to donate at least one item from to the 4 exhibits (1 fossil, 1 fish, 1 bug and 1 real painting), this will then unlock museum floor 2. After the 2nd floor is built, talk to Blathers. After some time he will talk about Brewster, and then you will get Brewsters (as a public works project). The garden shop is unlocked by pulling up weeds every day.

    You get Kicks after buying loads of stuff from Able Sisters. I think you will need to buy at least 5.000 bells of clothes. Furthermore, after unlocking Kicks you can get Shampoodle. This is done by buying 10.000 bells worth of clothes from Kicks and Able Sisters.

    To get the second floor of the muesum you have to give the owl 10 bugs,fish,fossils and paintings(which you only get from reds gallery which he only sells 1 real painting out of the 4.)

    Someone commented that you need 10 items from each exhibit, you don't. I unlocked 2nd floor with 1 item from each exhibit. Also there are numerous web articles for Redds store, and how to tell real and fake paintings/statues.
