    Touch the probe icon on the Gamepad. The option to change it will appear. Touch that and you'll be able to pick a probe to put there, out of any probes you currently own.

    You know the map on the Gamepad screen? If I recall, you can tap the green button in the upper right to see what probes you have set- in this case, basic, which will be represented by gears (I think). Tap one of them and the option to change, as well as stats, will appear. Tap that and it'll take you to a list of probes. Choose the one you want.
