There's nothing really special about any of the Ganons. Shoot them with arrows they're weak against, run and attack. Think about Phantom Ganon from OoT, that battle was interesting, but still used simple tools, like the sword and bow, and they just didn't try anything like that in this game. It's unfortunate, because the rest of the game is fantastic.
