Well coincidentally you actually can't go through the game without picking at least one up, unless I'm wrong. I'm pretty sure that the 2nd and 3rd boss require you to pick up the heart container in order for the pendant to appear, because it never does unless I pick it up. Otherwise I actually would try to do a 3 heart run.
