Recently I was able to defeat the weakest Lynel in a head-to-head bout. I'd suggest finding stronger weapons and armor before taking it on though. On a side note, the standard Lynel is the least intelligent of all the Lynel variants, as it hardly ever figures out that you're attacking it from behind. The stronger Lynel are quicker to react, as they will eventually catch on to your sneak attacks.
