For Flax anything, grow flax (it grows rather fast) and convert them with the Textile Mill (make it if you don't have it). For Wool+, it's obtained via feeding crispy treats to sheep (regular sheep, not the suffolk one). Once their byproduct level is at "D" they have a chance to give it when shearing. Save before doing it and reload if you don't get it at the first try.
