thiefs have a unique command called steal. with that command you can steal pretty neat items from enemy`s. random-encounter enemies tend to have compound items you can steal(those items don`t have any use now but you can sell them for a profit). make sure to steal things from bosses, they have VERY nice gear you can steal.
