Eve's Mode change was difficult, but when you keep your eyes on her mode change, it's pretty easy to handle. Those traits keep changing but all you really need to watch out for is the strengths/weaknesses of elements/normal attacks. Attack with what she's weak to and tank the attacks she throws out and you'll be fine. Every hit you land on her lets her get an extra turn.
